Commercial Cooking

The recommendations in this guide can help reduce the risk of fire associated with commercial cooking equipment and help reduce associated property damage and business interruption costs should a fire occur.

Commercial cooking is one of the most common re hazards due to the prevalence of these operations. This type of operation is found in restaurants and also as a support function for many other occupancies including hotels, hospitals, nursing homes, of ce cafeterias, and more. Commercial cooking equipment, particularly range top and deep fat fryers, are responsible for a signi cant number of re losses each year. According to the National Fire Protection Association (NFPA), between 2006 and 2010, U.S. re departments responded to an estimated average of 4,360 res per year caused by commercial cooking equipment. These res caused average annual losses of 72 injuries and $99 million in direct property damage each year.

Cooking with deep fat or vegetable oils produces grease-laden vapors that can be ignited due to overheating or contact with open ames, heating elements, or other hot surfaces.

Examples of cooking equipment that produce grease-laden vapors include, but are not limited to:

Depp Fat Fryers
Roasters
Ranges
Griddles
Woks
Tilting Skillets

Commercial cooking operations must follow the requirements of NFPA 96, Ventilation Control and Fire Protection of Commercial Cooking Operations, which includes the following equipment and procedures:

Exhaust Ventilation & Duct System
Automatic Fire Extinguishing System
Cooking Equipment Safety Interlocks
Regular Maintenance & Cleaning
